It will also be the fault of our evolutionary past. After all, the practice of slaughtering dates back to at least 3.4 million years ago, when we began to develop an omnivorous diet which also included meat (the three great omnivores of the animal kingdom, according to the psychologist Paul Rozin, are rats, cockroaches and man: because they are everywhere and they always find something to eat). It will be this and more, but we can’t take it anymore. Of this bipartisan tendency that sees us united in defending phantom food traditions and practices and opposing the production of synthetic food like soldiers in the trenches: the earth yes, the laboratory no. As if they were two boxers fighting each other, flowers are born from the manure from the laboratories nothing is born, we all say in chorus, paraphrasing the master. The truth is that here, without the research done in the laboratories, the earth loses its importance, it becomes discolored, there is no manure that holds. Without research agriculture does not go ahead, you feel like saying no chemistry, no biotechnology, no CO2 emissions, yes bio, and yes to local food, away with km zero, long live Made in Italy, no multinationals, etc. Because if we want a more sustainable agriculture (with less chemicals, less ploughing, less impact) we must found not one but a hundred laboratories, a hundred factories where we can experiment with the food and plants of the future.
